Judging from the comments, maybe this dish would be better (albeit a little more work) if the sweet potatoes were cubed and roasted, then added at the end? I am going to Pin and try to make it.
I agree. The peppers should have been added first then potatoes last. Once the peppers finally softened, the potatoes cooked too long and were mushy. It also did not have much flavor. Disappointed!
